Raw Pea Protein Snickers Slice

This is our favourite Raw Snickers Slice recipe, and by far the most delicious that we've tried (and we've tried many). 

Completely refined sugar-free - just nuts, dates, natural sweeteners and peanut butter 😄

A good way to satisfy that sweet tooth without all the refined sugar and artificial ingredients - this recipe has gotten us through many sugar crazy hangry moments! 

Ingredients:

For the base:
1/2 cup gluten-free rolled oats
1/2 cup cashews
1/2 cup almonds
1/2 cup shredded coconut
1/4 cup brown rice syrup
2 tbsp peanut butter
pinch of pink Himalayan sea salt

For the peanut butter caramel:
1 cup pitted Medjool dates, soaked in hot water for 30 minutes (we use normal dates sometimes as medjool can be expensive- just soak them longer/blend harder)
1 tbsp peanut butter
1/2 tbsp brown rice syrup
pinch of pink Himalayan sea salt
1/2 cup shelled peanuts

For the chocolate:
2 Tbps Noode vanilla protein
1/4 cup coconut oil
6 tbsp raw cacao powder
2 tbsp maple syrup
1 tbsp peanut butter

Instructions

For the base:
In a food processor, process the oats, cashews, almonds, coconut, and salt until all ingredients are broken down into a flour-like consistency.
Add in brown rice syrup and peanut butter and process until a sticky ball of dough forms.
Press base down evenly in a loaf pan or slice tin lined with non-stick parchment paper.
Place in the freezer to set.

For the peanut butter caramel:
Drain the dates.
Process dates, peanut butter, brown rice syrup, vanilla, and salt in a food processor until smooth.
Spread caramel over the base and sprinkle peanuts on top of the caramel.
Lightly press peanuts into the caramel and place back in the freezer.

For the chocolate:
Heat coconut oil in a saucepan over low heat until completely melted.
Add in cacao powder and maple syrup and whisk together until fully mixed.
Pour chocolate evenly on top of the caramel.
Drizzle with peanut butter and swirl it through the chocolate with a spoon.
Place back in the freezer for at least 2 hours.
Remove from the freezer and let thaw for 30 minutes before cutting into slices.
Eat within 20-30 minutes after removing from the freezer!
